Tuscan Chicken with Pasta

I love all pasta. Short and fat, long and skinny. And the more sauce my delicious pasta is bathed in, the better. From my lips to my hips…

Jokes asides. It’s been an incredibly busy few months with very little time to blog my recipes. But hey, I’m back. So lets begin.

I love this recipe because it’s a. easy and b. super delicious (I say that about all my food). The chicken is slow cooked leaving it tender and a melt-away moment with every fork full. I  used fresh tomatoes, sun dried can also be used. I grated the tomato into my mixture.

As always enjoy the dish.. it serves 4 – 6.

Ingredients

Sauce

½ cup unsalted butter

2 cups parmesan cheese, grated

1 cup cream

1 Tbs lemon juice

Chicken

1 Tbs unsalted butter

4 boneless, skinless chicken breasts, browned and seasoned both sides

1 tomato, skinless and grated

1/3 cup parmesan cheese, grated

2 teaspoons Italian seasoning (see below for homemade)

1 ½ cups fresh spinach, chopped

Salt and ground pepper to taste

Penne or spaghetti

Italian Season – homemade

1 tsp of the following (all dried), parsley, basil, garlic powder, rosemary, onion powder, oregano, thyme

Add ½ tsp of the red pepper

Add ¼ ground black pepper

Mix well and use according to recipe.

Preparation

For the sauce, melt the butter into a medium saucepan over medium heat, then pour in the cream.

Cook for 5 to 7 minutes or until the cream starts to thicken, then stir in the parmesan cheese and lemon juice, stirring until all the cheese has melted and the sauce has thickened. Do NOT allow to boil.

Taste and season with salt and pepper, then remove from the heat.

Slice the chicken into strips (I usually fry the chicken a little longer in it’s juices to start the tender process). Stir together the sauce, tomatoes, parmesan cheese and Italian seasoning in a medium pot with the chicken. Put the lid on and cook over a low to medium heat till the chicken is tender. Stir continuously so that the chicken doesn’t stick to the bottom of the pot.

When the chicken is cooked through, stir in the freshly chopped spinach and cook for a further 5 to 10 minutes. Add the cooked penne to the sauce and mix.

Serve with a side salad.
