I came across this recipe and adjusted it a bit to a summer meal without any hassles, less time in the kitchen and more time relaxing on the deck with a glass of wine. The mango is the trick here and does end the meal off with a somewhat refreshing feel.
500g minced pork
2 Tbs ginger and garlic (already made either in a paste or ready chopped)
1Tbs chilly flakes or 1 fresh chilly
1 Tbs soy sauce
3 Tbs oyster sauce
salt and pepper
2 cups shredded cabbage
1 mango thinly sliced
½ red onion, thinly slices
handful fresh coriander
2 cups self raising flour
5 Tbs plain yogurt
Heat oil in a large pan and fry the mince till brown. Add the remaining ingredients to the mince and cook for about 15 minutes, stirring regularly.
Mix 4 tablespoons of plain yogurt into the flour. If its too dry add another tablespoon.
Cut the dough into 4 even pieces. Roll out on a floured surface till 1/4 inch thick. Don’t make it to thin, it will become too crispy.
Cook in a pan till brown on both sides.
Spread yogurt on the bread. Top with mince and slaw and garnish with the coriander.

You can buy flatbread from your local grocer store.
You can make your own mince by slicing the pork fillet into chunks and pulsing it in a food processor.
