Fudge in a Flash


This recipe can be changed to have nuts or cherries added. A simple fudge recipe that’s made in the microwave and ready in less than an hour… that’s after cooling.

Makes about 12 squares.


30ml (2T) melted butter

500g icing sugar

1 tin condensed milk

125g butter

100ml chopped nuts / cherries

5ml (1tsp) vanilla essence


Grease a 20cm square cake tin with a little melted butter, line it with baking paper and grease the baking paper with butter.

Sift the icing sugar into a big glass bowl or microwave-proof dish and mix with the condensed milk and butter.

Microwave the mixture on 100% power for 2 minutes, then whisk well. Microwave for another 10 minutes, stirring well after 5 minutes.

Add the nuts or cherries and the vanilla essence and beat with a wooden spoon until it thickens slightly.

Pour the mixture into the prepared tin, spreading it evenly with a wooden spoon.

Cut the fudge into squares before it sets and leave to harden.

Remove from the tin with a spatula.

The bowl gets very hot in the microwave whilst cooking the mixture. Please handle with care.

Every microwave is different in watts, please use time accordingly.
