You read the heading correctly. Only 3 ingredients. I must admit I am fussy when it comes to selecting the correct christmas cake mix. So I decided on one pack but added cherries to the mix. NOw whats better than slicing through a cake that’s not only filled with beautiful round cherries but also soaked in brandy. Once a week for 3 weeks I poured 2 tablespoons of brandy over the cake, and left the cake wrapped tightly in a dark place.
The cake is moist and really delicious. I’ve eaten the cake by itself and had a small amount with custard. So yes, we were celebrating Christmas in September. The total cost for this cake is about ZAR100. I think quite reasonable considering how expensive fruit cakes are. I did not add any icing over the cake as the family aren’t too keen on the fondant and marzipan. Then again, we would be exceeding the 3 ingredients eh?
1kg Fruit Mix
2 cups Fruit juice
2 cups Self raising flour
Soak the fruit in the juice overnight.
Preheat the oven 130°C.
Stir the self-raising flour into the soaked fruit mixture and mix well. Pour into a large lined baking tin. Bake for 2 hours in the middle of your oven.
Remove and leave to cool. Remove the cake from the tin. When it’s cool, put into a container or wrap in foil and then clingwrap. Keep for 2-3 days before cutting.
I love cherries, so I used 600 g mixed fruit mixture. Then I added 400g red cherries, or if you want mix 200g red and 200g green cherries.
I used orange juice. If you prefer, use 1 cup orange juice, 1 cup brandy instead of 2 cups fruit juice.
