Crunchies

I used to make these crunchies for my girls when they attended school. Recently I made a batch but this time added a few more ingredients to ‘zooch’ it up a bit.

Ingredients

1 cup flour

1 cup desiccated coconut

2 cups old fashioned oats

½ cup raisins

1 cup almonds, chopped

¾ cup brown sugar

½ tsp salt

1 tsp bicarbonate of soda

½ cup melted butter

2 Tbs honey or syrup

Preparation

Preheat the oven 180°C. Grease and line a baking tray or large square casserole dish.

Mix the flour, bicard and salt together. Add the oats and coconut.

In another bowl, mix the butter, honey and sugar together.

Make a well in the center of the dry mixture and add the sugar mix. Blend well.

Add the raisins and almonds. Mix well together.

In the baking tray or dish, pour the batter and pack tightly.

Bake for 20 minutes or till golden brown. Switch off the oven and leave for a further 5 minutes.

Remove and cut into squares. Makes 12 large squares.
