Cauliflower Pizza Crust

When I saw this recipe for a cauliflower pizza crust, I immediately thought of a ‘no meat’ day and how I can make a simple crust into an amazing pizza. This crust is really tasty and simple to make.

1 Medium head of cauliflower

1 Large egg

½ tsp dried Basil

½ tsp dried Oregano

½ cup grated Mozzarella

Salt and Pepper

Preheat the oven 220C.

Break the cauliflower into smaller pieces and place in a blender to blitz till fine.

Remove and microwave for 4 minutes.

Pour the warm cauliflower onto a clean cloth and wring the water out of the cauliflower. You’ll be pleasantly surprised at how much water comes out.

In a bowl, add the wrung cauliflower, egg, herbs, cheese, salt and pepper. Mix well.

Pour the contents onto a baking tray lined with baking paper. Shape the dough round and not too thick.

Bake for about 20 minutes or till a light brown.

The cooked base can be frozen for up to 6 weeks and the uncooked dough, refrigerated for 2 days.
