I made these biscuits when hubby and myself first got married, 35 years ago. Just the other day, I was going through my recipe book and found them again. I made some adjustments and the best thing about these biscuits and recipe is the INSTANT PUDDING you add.
They soft and very difficult to have only one.
Ingredients
1 Cup softened butter
¾ Cup light brown sugar
¼ Cup castor sugar
2 Eggs
1Pkt instant pudding – I used butterscotch. Vanilla also tastes good
2½ Cups all-purpose flour
5ml Baking powder
½ tsp Salt
1tsp Vanilla extract
Method
Preheat your oven 180° C.
Cream the butter and sugar well. Add 1 egg at a time, mixing well. Add the vanilla extract.
In another bowl, combine the flour, instant pudding, baking powder, and salt.
Add the dry ingredients into the butter mixture. Mix well.
Pinch off dough in small pieces and roll into balls, about the size of walnuts. Place on a baking tray covered with baking paper. Press down with a fork.
The dough will spread. This mixture makes 36 biscuits, all depending on the size of your dough balls.
Remove from the oven, and leave to stand for about 2 minutes. Place on a wire rack to cool completely.
