True story, this is the first time I’ve ever made a cremora tart. I hear so many of my friends chatting about it, I decided it time to make THEE cremora tart.
It’s what I would like to call a cheesecake hack. It’s not a cheesecake, but looks like one and tastes like one… The verdict – the tart tastes amazing.. here goes..
1pkt Tennis biscuits or any coconut biscuit
100g Butter – melted
250g Cremora powder
250ml Hot water
1tin Condensed milk
125ml Freshly squeezed lemon juice
Fresh Cream & Fresh fruit – optional
Blitz the biscuits in a blender to crumb. Add the melted butter and mix again. Line a pie dish with the biscuit mix and press the mix down. Freeze till needed.
In a bowl, pour the hot water over the cremora powder. Give a little stir so that all the powder is dissolved. Leave to cool.
In another bowl, mix in the lemon juice into the condensed milk. You’ll notice that the mixture thickens.
Once the cremora mix has cooled down, blend on high till light. Similar to thickened cream. This is what gives the tart the lightness. Gently add the condensed milk and lemon mixture. Don’t over mix.
Remove the dish from freezer, and pour the filling onto the biscuit base. Smooth over. Chill for an hour.
Serve with fresh cream and sliced fruit…
