Week 2 – Almost halfway


The juicing has become easier. My favourite 2 smoothies have to be the ones with berries in and mixed seeds in. Over the weekend I had a salad, with a zesty lemon dressing, and a variety of soups. My favourite by far has to be the butternut soup.

Two reasons for my choice, 1. its easy to prepare and 2. it tastes really good.

Here’s the recipe for the easy soup:


Half a butternut, peeled and pitted

1 medium carrot, peeled

1 red onion, peeled

1 teaspoon vegetable stock or 1 block of stock

1 tablespoon vegetable oil

500ml water


Chop the onion finely. Chop the butternut and carrot into larger pieces.

Add to the oil and allow the ingredients to sweat for about 5 minutes.

Add the 500ml water with the vegetable stock.

Allow to boil for 20 minutes.

Blend till its smooth with some courser pieces

Serve, and enjoy!

This soup may 2 servings.
