It was a Sunday evening watching the 8pm movie when my Renault man and myself felt like something yum to eat. So I said, I have a tinned canned of peaches, let me make a hot sponge pudding… well, like they say, the rest is history!
1 cup Castor sugar
3 Eggs (separated)
1 t Vanilla essence
60 ml Oil
125 ml water
1 cup Flour
3 t Baking powder
1 tin Sliced peaches (drained)
Heat the oven 180C or gas stove, 3.
Beat the eggs yolks and sugar till pale yellow. Add the vanilla essence.
Add the oil and water. Add the sifted flour and baking powder.
Add the stiffly beaten egg whites. Mix by hand.
Pour the batter into a medium size Pyrex dish. Add the sliced peaches evenly in the batter.
Bake for 30 minutes or till golden brown.
Serve with custard… and you’ll be pleasantly surprised at how easy this pudding is.
