The mere thought of cooked bananas make me squeal. I cannot fathom how someone could put a warm piece of cooked banana in their mouth. I’ve tried many pudding recipes and keep coming back to my favourite, Banana Bread.
When my girls were much younger, this was an item other than jam squares that was a constant in our house. I’ve used the bananas from our garden. So, I’m super proud of my little yellow beauties!
Not too delay the process, here’s the recipe.
1/4 cup Stork butter
1 cup Castor sugar
2 cups Flour
2 t Baking powder
1 t Vanilla essence
1/2 t Salt
4 – 6 Mashed ripe bananas
Heat the oven at 180C or Gas stove 3.
Cream the butter and sugar and add the flavouring. Add eggs, one at a time, beating well after each addition.
Sift dry ingredients and add.
Lastly add mashed bananas. Mix well.
Bake for 1 hour or till golden brown and the tester comes out clean.
Serve with butter…. now that’s where the weakness is. Warm banana bread with butter…
