This has to be one of the easiest meals ever to prepare. I love serving this quiche with a fresh green salad filled with all sorts of greens, red and orange vegetables.
250ml Cheddar cheese grated
1 Tablespoon cold water
30g Stork / Butter
Pinch of salt
100ml Cheddar cheese grated
300g Baby spinach
250g Feta cheese
Salt and pepper
Heat the oven to 180 degrees or Gas oven 3.
For the base:
Rub butter into the flour. Add the egg and water. Add the cheddar cheese and mix well to form a soft dough ball. Wrap in clingwrap and store in the fridge for 30 minutes.
Once done, remove the dough from the fridge and roll out to fit a medium size pie dish. Place in the buttered dish and press edges onto the side of the dish.
Cook the spinach till its ready. Drain the water off thoroughly. Allow to cool. Break the feta up into crumbs and mix with the spinach. Place the spinach and feta mixture on the base.
In a jug mix the eggs and cream. Pour this mixture over the spinach and feta.
Sprinkle salt and pepper. Add the grated cheddar cheese to the top.
Bake for 35 minutes or till ready and brown on the top. Switch off oven and leave for an extra 5 minutes.
Remove and leave to cool. Serve with your favourite side salad.
Whats so delicious about this quiche, is having a slice the next day for lunch. It is really tasty when cold.
